Asparapasta
Ingredients
- cooking oil
- 6–8 rashers of smoked bacon, thinly sliced
- one pack of asparagus, around 180g, sliced into bite-sized pieces or smaller
- half a brown onion, thinly sliced
- one lemon, juiced
- your favourite sweet chili sauce, to taste. I use Healthy Boy
- penne or whatever pasta you prefer
Additions: Garlic bread and parmesan. Always a garlic bread and parmesan.
Method
- Get water boiling in your pasta-cooking pot and heat all the cooking oil in your frying pan. If you're having garlic bread, heat the oven. Once they're both hot, add all of your pasta to the boiling water and all your garlic bread to the oven. Set a timer for eight minutes to check on both, and in the meantime, start frying up the bacon
↓ 6 minutes or until the bacon is crispy af.
- Add all the onion and asparagus to your frying pan with the bacon. Stir thoroughly.
↓ 4 minutes or until your onion has clarified.
- Lower the heat under your frying pan to medium-low. (Your timer may be going off now; drain the pasta if it's done and set it aside, or set a new timer to track it.) To your frying pan, add all of the lemon juice and as much sweet chili sauce as you desire. I use quite a lot, a good four or five lashes. Keep stirring as it cooks.
↓ 2 minutes, or until your asparagus is soft and everything in the frying pan has nicely gooped together.
- If you haven't already, drain your pasta. Serve the pasta into bowls and top with the mixture from your frying pan. Top with parmesan and pepper, if you like, and remember to rescue the garlic bread.
