Chorizo, Chickpea and Spiced Cauliflower

Ingredients
- olive oil
- ~100g chorizo, skinned and cut into half moons
- half a red onion, diced
- 2 garlic cloves, crushed
- 2 tsp fennel seeds
- 1 tsp crushed cumin
- 1 large head of cauliflower, cut into small florets
- handful of fresh flat leaf parsley, shredded
- 2 tbsp greek style yoghurt
- the juice of half a lemon
- 1 tsp Dijon mustard
- drizzle of honey
- pinch salt
Additions: Halfway through cooking this recipe for the first time, I had a little panic that there wasn't going to be enough food and added brown rice with spinach (fry half an onion in oil for five minutes, add two chopped cloves of garlic and fry thirty seconds longer, then add thyme, salt, pepper and a portion of quick-cook brown rice. Add a vegetable stock cube and cover with boiling water, then stir thoroughly. Cover and simmer on the stove for 20-25 minutes, stirring regularly, and add extra water if it all absorbs before time, although the aim is for it all to be absorbed by the end. When the water's absorbed and the rice is cooked through, take it off the heat, add two handfuls of spinach to the pan and cover for five minutes).
Method
- Pour a little oil into your roasting tin and line the bottom with all the red onion. In a separate bowl, mix all the garlic, cumin, fennel seeds and cauliflower, then spread it all out atop the onion. Drizzle a further two tablespoons of oil evenly over the top. I sprinkled a pinch of the parsley on top too; we'll see if that works! Put the tin in the oven to roast.
↓ 30 minutes - but use this time to make the yoghurt sauce:
- In a cup or bowl, mix all of the yoghurt, lemon juice, Dijon mustard, honey and salt.
- When the thirty minute timer goes off, add all the chickpeas and pine nuts to the tin. Stir them around, then add all the chorizo evenly on top. Return to the oven.
↓ 20 minutes
- Remove the tin from the oven and stir in all the parsley and dill. Serve with the yoghurt sauce.
